Ingredients

1/2 cup VitaHustle ONE Superfood Vanilla flavor
1/2 cup coconut flour
1 tsp baking powder
1 tsp baking soda
3/4 cup nonfat Greek yogurt
1/2 cup olive oil
2 tbsp honey
1 egg
1 tsp vanilla
Directions
In a large bowl, mix 1/2 cup ONE Superfood vanilla protein powder with 1/2 cup coconut flour, 1 tsp baking powder, & 1 tsp baking soda.
In another bowl, mix 3/4 cup nonfat Greek yogurt, 1/2 cup olive oil, 2 tbsp honey, 1 egg, & 1 tsp vanilla.
Combine the dry ingredients with the wet. Once mixed well, fold in 1 cup blueberries and the zest from 1 lemon.
Divide the batter into 10 muffin tins and bake at 350 F for 20-25 minutes.
