In a food processor, begin my blending all the ingredients for the peanut butter center. Blend until dates are fully processed. Form small balls with the peanut butter mixture and place on parchment lined plate in the freezer for at least 10 min (as you make the chocolate portion)
In your food processor, blend all chocolate ingredients together until there are no large clumps.
Scoop out ~1 tbsp of chocolate mixture and press it flat. Place a peanut butter ball in the center and begin wrapping up the ball with the chocolate coating. Roll gently between your hands to form a ball shape. *if your mixture is slightly dry add in just 1 tbsp of water at a time.
Store in the fridge and they will firm up perfectly.
